- Wash bitter leaf properly and cut them if too long and set aside
- Wash the beef, dry fish and stock fish and set aside
- Wash and cook the cocoyam until very soft then pound it smoothly and set aside
- Put the meat, stock fish in a pot and add water, seasoning cube, salt and crayfish put it on fire to boil until it well cook
- Once they are well cook add palm oil and dry fish and allow to cook for some time then add grinded pepper and the pounded cocoyam then cover and allow to boil for some time
- Wash and slice the uziza leaf. Add it in the pot also the ogiri. At this point add the bitter leaf and add more Maggi and salt (if necessary) and cook for like 10 minutes. Your bitter leaf soup is ready
Called Ofé Onugbo by the Igbos, the Cameroonians. Bitter Leaf Soup, also known as Ofe Onugbu is a popular and delicious Nigerian soup. It is peculiar to the Igbo tribe of Eastern Nigeria.
