  8. Take 1 tablespoon grounded Cameron pepper
  9. Get 2 tablespoons grounded crayfish
  10. Make ready 2 heap tablespoons of ground achi
  11. Prepare 2 hand full of washed bitter leaves
  12. Make ready to taste Salt

Bitter leaf Soup also known as (Ofe Onugbu / Obe efo Elewuro or Miyan shuwaka) is a delicious traditional Nigerian soup. Bitter Leaf Soup, also known as Ofe Onugbu is a popular and delicious Nigerian soup.

Steps to make Bitter Leaf Soup(Ofe Onugbu):
  1. Wash and season your meat with two knorr cubes and salt, the boil till tender, half way boiling your meat add the stock fish
  2. Boil and extract the juice from your palm nut then pour in your cooking pot and set on fire, allow to Cook for ten minutes
  3. Next add the meat and meat stock to the pot then continue to cook for about ten minutes, then add the dry fish and pepper cook for few more minutes then the achi and allow to start thickening
  4. Lastly, add the bitter leaf, taste and adjust the taste with the remaining knorr cube and salt, allow to thicken to your desired consistency then bring down

It is peculiar to the Igbo tribe of Eastern Nigeria. Wash the Bitter leaves with hot water to get rid of as much bitterness as you can. There should be almost no hint of bitterness left in the leaves after washing. Hence Ofe onugbu is bitterleaf soup. The soup like most soups from the region has a meat / fish broth base and requires thickening which is done by adding pounded cocoyam paste (ede).
