Ekwang, also known as ekpang nkukwo, is made of freshly grated cocoyam, then wrapped in leafy greens and slowly simmered with various types of fresh or smoked meat, fish, crayfish. Ekpang Nkukwo is similar to the Ijebu Ikokore (recipe HERE), as they are both pottage dishes.

Instructions to make Ekpang nkukwuo:
- Put oil at the base of the pot, then Peel and grate the cocoyam and water yam together and mix it together, then wrap it in the vegetable leaves in small portions, and place them on the oil in the pot, continue until you wrap up all the mixture. Then add the blended crayfish, pepper, salt, maggi, cow hyde and stock fish. a
- Cover the pot and allow the oil to melt and then add water from one corner of the pot to avoid loosening the wraps, add water until it covers to the surface then cover the pot allow it to cook for 20mins then stir it and taste, if it looks too thick add a little more water to loosen it up a bit then add shredded vegetable leaves then allow it to cook for 5mins then stir it and allow it to cook for 5mins then put off the gas cooker.
Ekpang nkukwo is prepared with grated coco yam, vegetables , dried fish, goat meat or any meat of your choice, palm oil, crayfish,fresh pepper and seasoning.
