- Set another pan over medium heat and add your olive oil. Sauté your onions in the oil for about a min or until translucent, add your tomatoes and chillies and fry for a further 2-3 mins. Turn off heat and leave to cool.
- Break your eggs into a bowl, add the fried tomatoes along with some salt and mix together.
- Coat a non-stick frying pan with cooking spray or vegetable oil. Spread your noodles around the base of the pan and pour the egg mixture over it. Lay the fried plantains gently over the egg mixture; place a lid over the pan and set over low heat. Cook for 10-15mins or until the egg is completely firmed up. - Turn off the heat and allow to rest for 5 minutes before serving.
