Bitter Leaf Soup, also known as Ofe Onugbu is a popular and delicious Nigerian soup. Wash the Bitter leaves with hot water to get rid of as much bitterness as you can.

Instructions to make Ofe Onugbu (Bitterleaf soup):
  1. Wash and peel cocoyam. Put in a pot, add water and boil until thoroughly cooked. Remove from water and pound to paste in a mortar or process in a blender. Set aside
  2. Boil goat meat in pot till tender. Add smoked, dried fish and stock fish. Add seasoning cube, salt, crayfish, pepper and simmer for 15 minutes.
  3. Add pounded cocoyam and palm oil. Stir well to dissolve cocoyam paste. Simmer for another 5 minutes. You can add more water if it is too thick.
  4. Add your periwinkle and washed bitterleaf. Simmer for another 5 minutes. Taste and adjust for seasoning.
  5. Your soup is ready. Serve with your choice of swallow, pounded yam, semovita, wheat, eBay.

There should be almost no hint of bitterness left in the leaves after washing. Hence Ofe onugbu is bitterleaf soup.
