- Wash and pour ukwa in a sizeable pot.
- Pour in enough water,as is boiling add potash.
- Use a pressure pot to boil for a shorter period of time.like 45mins.
- Sieve out the water and keep aside.
- Add Maggi,Palmoil,salt to the already boiled ukwa and mix very well.
- Wash bitter leaf very well with warm water and salt to remove the bitter taste.
- Then add bitter leaf.boil for 2mins.food is ready.
A little bitter leaf is usually stirred into it for effect. Ukwa is rich in protein and has a rich natural taste.
