  1. To make Eba: Bring the water to a boil. Transfer to a bowl. Sprinkle the garri all over the water. Save a little for the final part. Drain the top water. Then sprinkle the remaining garri on top.

  3. Okro Soup: Wash the Okro thoroughly. Grate the Okro (you could use a knife as well), set aside. Add the locust beans to the water. Transfer to a pot and cook for about 3-4 minutes. Add grated Okro and little potash (the potash is meant to help the Okro retain its green colour)
  4. Stir and allow to cook for about 2 minutes (do not over cook, Okro is also a vegetable). Add seasoning and a pinch of salt. Stir and take off the heat.
  5. To make stew: Heat up the vegetable oil or preferably the oil used in frying the beef. Add the pepper & tomato mix. Cover and allow to cook and fry at the same time until it separates from the oil (stir occasionally so it doesn't burn). Add cooked ponmo and stir.
  6. Add stock, seasoning cube and salt to taste. Cover and allow to simmer for about 5 minutes. Add the fried beef. Steam for a minute and take off the heat.
  7. Note: The pepper and tomato mix is a blend of tomatoes, onion, red bell peppers and scotch bonnet pepper that was boiled down to remove the water and achieve a thick paste.
