  1. Get 500 g palm Kernels
  2. Make ready 500 g Beef
  3. Prepare 250 g Stockfish(ear)
  4. Prepare 1 teaspoon banga spice
  5. Get 3 medium attarugu
  6. Get 2 medium Onions
  7. Get to taste Salt
  8. Make ready 1 handful Scent leaves
  9. Make ready 2 Seasoning cubes

It is similar to the Efik's Banga Soup,which is traditional prepared with native spices, known as Banga spices. These spices gives the soup a unique taste and flavor, which makes it a bit different from the Igbo's Ofe Akwu. Ofe Akwu (Banga soup) is a kind of stew made from palm fruit, eaten mostly by the Igbos from the eastern part of the country.   1. Spice beef with 1 Oinon, salt and Seasoning cubes. Add in the stockfish and cook until tender. Set aside.
  2. Wash the palm kernels and cook until tender.
  3. Pound or blend attarugu(pepper) and Onion, set aside.
  4. In your clean mortar, pound cooked palm kernels gently to separate skin for seed.
  5. When skin is off, Pour water into.the mortar and wash, squeeze the palm kernel skin very well.
  6. In your clean pot, turn the palm kernel water and cook. Allow to boil till it begins to thicken. As soon as it thickens a bit and you start seeing oil, add in your banga spice and pounded pepper mix.
  7. Add in your cooked beef and stockfish and stir very well. Allow to cook until you get your desired thickness of stew.
  8. Add Scent leaves, correct seasoning if need be and put off heat.
  9. Serve with hot rice, yam… and enjoy.
