- Take 1 bundle Pumpkin leaf(Ugu)

Beef: I used beef in this recipe but you can use any assortment of meat of your choice like tripe, cow. Banga soup is native to the Deltans but also loved and enjoyed by edo people and other niger delta states. This is served with starch, eba or fufu. Take some of the remaining turkey meat you reserved earlier, shred it into bite sized pieces and add it to the soup.
Instructions to make Banga Soup with Turkey meat:
- Wash and cook palm fruit till soft. Then pound and extract the juice using water.
- Put to boil for about 5minutes.
- Wash turkey meat and place in a clean pot, add 1 seasoning cube, salt and sliced onions. Add a little water and cook for 15minutes till water is almost dried and turkey is a bit soft.
- Pour the cooked turkey into the boiled palm fruit extract.
- Grind the fresh pepper together with crayfish and native seasoning. Put mixture into the soup, add the remaining seasoning cube and a little more salt to bring out the taste. Cook for 10minutes.
- Add the Scent leaf and pumpkin leaf and cook for just 2minutes.
- Serve with rice etc.
