The ingredients needed to make Afang Soup:
  1. Get 1-2 bunches water leaves
  2. Take 3 cups ukazi (afang)
  3. Take 1-2 cups palm oil
  4. Get 2 cups crayfish
  5. Get 6 habenero peppers
  6. Get 1 bulb of onion
  7. Make ready 2 spoons salt
  8. Make ready 4 stock cubes
  9. Make ready 1 kilo of goatmeat
  10. Get 1 head stockfish
  11. Take 2 large kpomo
  12. Take 1 cup periwinkles

Afang soup is a tasty, nutritious Nigerian soup, native to the Efiks/Ibibios (Akwa Ibom This delicious soup has a slight bitter taste and is usually prepared with a combination of vegetables (Afang leaves. Afang soup, native to the Efik and Ibibio people of Nigeria is a delicious Calabar vegetable soup made with Afang leaves and a leafy vegetable called waterleaf or malabar spinach. Instructions to make Afang Soup:
  1. Cut and wash the water leaves. Put into a colander and leave aside for water to drain
  2. Blend half of the crayfish. Pound the remaining with the habenero peppers and half of the onion.
  3. Wash the stockfish head with hot water, put into a pot with the washed meat. Season with the remaining onion, seasoning cubes and half of the pounded mix
  4. Allow the meat and stockfish to cook well and the stock to reduce till almost dried.
  5. Meanwhile wash and chop the kpomo and add to the cooking meat when it's almost done.
  6. Once the stock is almost dried, pour in 1 cup of palm oil and the water leaves
  7. Do not cover the pot
  8. Once it starts to cook, add the remaining pounded mix and the ukazi (ukazi should be ground in the market or pounded thoroughly)
  9. Stir, cover the pot and allow to cook.
  10. After 5 minutes, add the periwinkles, check for seasoning. Add more palm oil if necessary and pour in the ground crayfish
  11. Allow to cook on low heat for about 10 minutes.
  12. Serve and enjoy with hot pounded yam.
