Jollof Spaghetti or Spaghetti Jollof is a quick meal, that got it's name from the popular Nigerian Jollof Rice. Jollof Spaghetti is quite easy to prepare and can be made with or without vegetables. Jollof spaghetti is spaghetti cooked in tomato sauce and spices just like one would cook jollof rice but using spaghetti instead. Some people also call it spaghetti jollof or Jollof pasta.

  1. Boil spag and set aside. Rinse with cold water to remove starch
  2. Blend pepper and set aside. I didn't add all the cloves. Just little is ok
  3. Chop veggies and set aside
  4. Heat up oil and add onions, tomato paste
  5. Add blended pepper and cover to boil
  6. Add spaghetti and veggies. Mix and cover to simmer on the lowest heat. Take off, stir very well again from the bottom before serving
