It's actually the second pasta recipe I have ever posted on the blog. I want to believe that Jollof Spaghetti was born out of need to use left over stew to eat your spaghetti on a Friday evening. I am bringing an interesting twist to your regular Jollof Spaghetti. When I tasted the end product, I felt Jollof Spaghetti was missing something.
Instructions to make Jollof spaghetti with veggies:
- Place your hot water on fire and allow it to boil, transfer the spaghetti into the boiled water and allow it to cooked for atleast 5minutes and then parboiled the spaghetti
- Blend the pepper, tomatoes and onions then set aside.
- Place the oil on the fire, and transfer the blended veggies into the pot, stir well until cooked, then add the sweet corn inside and 1/4 cup of water into it, then allow it to boil
- Then add the perboiled spaghetti into it, dice cabbage, curry, thyme and seasonings into it at middle heat and allow it to cooked
I had tried to make jollof spaghetti in the past, and it was not a success! It tasted okay, but it was missing that special "jollof-ness" for some reason. We Nigerians LOVE to ram it down the throats of the world that we remain the purveyors of jollof perfection: that right balance between tomato and spice. Jollof Spaghetti or Jollof Pasta is simply a Nigerian Jollof Rice inspired method of cooking Spaghetti or any other pasta. I absent mindedly added my veggies before the pasta, but do try to add the pasta before the veggies, otherwise, the veggies will become a bit soggy if left to stew for too long.
