- In a frying pan, add olive oil and onion, sauté for 2-3 seconds

- Next, add black pepper, salt. Combine to mix well and cook until done. Add fresh coriander and set aside
- For Tomatoes Salsa: In a bowl, add tomatoes, onion, fresh coriander, cumming seeds, black pepper, green chilies, bell peppers, lemon juice and salt. Mix well and set aside.
- For yogurt or Mayonnaise Dip: In a separate bowl, add yogurt, black pepper, garlic, green chilies, fresh coriander and salt and whisk well. I used Mayonnaise because I couldn't find thick yogurt. The taste was very very good too.
- Assemblying: Place the tortillas flour, spread the mayonnaise dip, stuff with cooked mince filling, tomatoes salsa, cucumber. Then roll and seal with mayonnaise.
- Then serve with any drink of your choice
You probably don't have access to fresh corn tortillas (unless you live near a tortilleria or make them yourself), but the average store-bought corn tortilla is miles. Warm tortilla wraps filled with a rich flavourful spiced chilli made with soya veggie mince and beans, layered with salad, vegan cheddar and vegan creme fraiche in place of sour cream. Add your filling in a strip across the top of the tortilla from left to right (don't over fill), leaving a generous border. I like to do this over the baking pan because it can get a little messy. Crunchy tortilla shells, twice cooked so you can load them up with tender seasoned beef, a mountain of grated cheese, crisp lettuce and a tangy salsa.
