- Place a pan on medium heat add in little oil, and allow to be hot then add in onions, cook it until it becomes translucent, after 2 minutes of stir frying go ahead and add thyme and minced garlic. Then give it a good mix and continue to cook. When you begin to perceive the smell of the herbs then that's a good point for you to stop.
- Then go ahead and add in your rice(I used basmati rice which I already washed clean). Stir the rice in ur aromatic oil, fry the rice for about 5 minutes, then add in 1 can of coconut milk in the rice, chicken stock and curry powder
- And also throw 2 bay leaves and 1 scotch bonnet, and stir the rice. Cover and allow to cook for about 20 to 25 minutes. Then set aside
- In another pan pour 2 tablespoons of oil, add in diced onion and beef then fry for about five minutes or so. Then add in ur mixed vegetables and fry for another 5 minutes then add in ur bell peppers, add in seasoning cubes and stir.
- And then finally add in the rice and combine thoroughly, allow to cook for 2 minutes. Do not over cook, because you want ur veggies crunchy..Enjoy!
Divide the stir-fried vegetables into equal portions depending on how much your frying pan/wok/skillet can take. Place a portion of the stir-fried.
