Instructions to make Coconut Tart:
- Add sugar to butter and using a spatula mix thoroughly then add egg yolk and vanilla extract and mix.
- Pour the flour into the mixture and mix until everything comes together to form a dough, note do not over mix, turn onto a cling film
- Fold and store dough in the fridge for minimum of 30mins
- In a bowl combine flour, baking powder and mix and set aside
- In separate bowl add all other ingredients for filling
- In two batches add coconut mixture to wet mixture and combine
- Take a piece of dough and form a ball, press into tart or cupcake pan, shape and cut off excess, pour filling and level top. Bake in preheated oven on medium / high heat for 25-30mins depending on the size of the tart
They have a soft filling and are crisp on the outside; they are perfect as an entrée. Make the coconut tart shells and blind bake. Press pastry dough into the tart moulds. If your tart moulds are not non-stick, remember to grease the base and sides generously with butter. Unlike coconut bake, tart is on the sweeter side.
