This Curry Fried Rice is packed full of flavor. Easy to make and gluten free. Add some baked tofu or chickpeas for a hearty meal, or serve as a side with curries and stir fries. Remove the lid from the rice and stir well before adding the spring onions, carrot ribbons, coriander and a generous amount of seasoning.

- Wash rice, pour water in pot add in curry, turmeric, food colour cover and allow to boil, pour in rice parboiled then sieve and set aside
- In a pan add in oil, onion and fry for 1mnt, add in carrot, peas, sweet corn, butter, fried rice seasoning, garlic, maggi cubes, paprika, mix seasoning, red chilli and stir well
- Pour in rice and keep stirring for 10-15mnts then add in slice onion and dice green pepper keep stirring for 5mnts and serve π ππ
Bring to a boil; stir in rice. Real easy to make and tasted great. Stir the rice with a fork to separate the grains and serve garnished with chives or spring onions. I doubled the cloves, garlic and turmeric because I know I love those spices / flavours and garnished the top with crispy slow cooked onions, it turned out amazing. This northern Thai-style Chiang Mai curry is flavoured with ginger as well as turmeric.
